How To Make Keto Pumpkin Waffles

Preheat waffle iron.

Mix together wet ingredients (eggs, pumpkin, almond milk, coconut oil, vanilla). 

Add in dry ingredients and mix until batter forms.

Pour the batter into the waffle iron, then close and let cook for 4-6 minutes (this time really depends on your waffle iron)

Cook Time 10 minutes 8 seconds
Total Time 15 minutes 8 seconds

Ingredients

  • 3 Eggs
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Almond Milk
  • 2 Tbsp. Coconut Oil
  • 1/3 cup Monkfruit Baking Sweetener
  • 1 tsp. Vanilla Extract
  • 1 3/4 cup Almond Flour
  • 1/2 cup Vital Wheat Gluten or Oat Fiber (for gluten free)
  • 1/2 tsp. Baking Soda
  • 2 tsp. Baking Powder
  • Pinch Salt
  • 1 Tbsp. Pumpkin Pie Spice

Instructions

  1. Preheat waffle iron.
